The true cost of every dish, per portion

Build a dish's recipe from the ingredients in your catalogue and InnoBooks computes the cost per portion, the food cost percentage and the packaging cost — separately, because a container is not food. When a supplier's price goes up, you see right away which dishes suffer.

One recipe per dish, down to the last gram

Every recipe line is an ingredient from your catalogue, expressed PER PORTION. An ingredient can have a recipe of its own: a house sauce goes into three dishes, and the computation drills down to the base ingredients.

You buy by the kilo and cook by the gram? Set the line's unit: cost and stock deduction are converted. When the unit cannot be converted — a « case », for instance — the app warns you instead of computing a wrong number.

  • Sub-recipes: the house sauce counts in every dish that uses it
  • Unit conversion between purchasing and cooking
  • Yield per ingredient: the raw quantity accounts for the inedible part
  • Circular recipes detected, ingredients with no purchase cost flagged

Your food cost percentage, while you build the recipe

The cost per portion appears as you add ingredients, and the food cost — the recipe cost divided by the sale price — recomputes with it. The colour places you at a glance: green under 30 %, amber between 30 and 40 %, red above.

Change the dish's price and the percentage moves right away: that is how you set a menu price that holds a food-cost target, instead of guessing it.

  • Cost per portion recomputed live
  • Food cost percentage, with the usual industry bands
  • An ingredient is its own item type: tracked and counted, never sold as is
  • Missing costs are flagged instead of silently counted as zero

Supplier raises prices? You know which dishes suffer

An ingredient's purchase price updates when you receive the goods. InnoBooks compares it with the previous price and, when the increase is real, lists the dishes it hits with their food cost before and after.

« Poutine 41.7 % → 46.1 % »: the line reads in a second and tells you what to renegotiate, replace or reprice — before the margin walks out without anyone noticing.

  • Purchase price updated on receiving
  • Increases over the last 30 days, with the supplier and the percentage gap
  • Food cost before and after, dish by dish
  • Price history per ingredient and comparison between suppliers

Packaging cost, kept apart from the food cost

A dish eaten in the dining room consumes no container; the same dish delivered consumes a container and a bag. Packaging therefore lives outside the recipe and never enters the food-cost percentage — otherwise the same dish would have two food costs depending on which door it leaves by.

You attach packaging to a dish per order type, and you set company-wide defaults — one bag per takeout order, say — counted once per order, not once per dish.

  • Four order types: counter, dine-in, your own delivery, delivery platform
  • Company-wide default packaging, counted once per order
  • Packaging cost report for the period, grouped by order type
  • Never mixed into the food cost

Sell a dish, the ingredient stock goes down

When the till rings up a composed dish, its recipe's ingredients are deducted from stock, drilling through sub-recipes down to the base ingredients. A dish without a recipe touches nothing.

Waste is recorded separately, with its reason, and shows up in the dashboard's waste panel: you see what was sold, what was thrown out, and what the gap costs you.

  • Recursive deduction on every cashed sale
  • Waste and loss with a reason
  • Manual stock adjustments when the count calls for it
  • Waste panel on the dashboard

Where recipes live in InnoBooks

Recipes, food cost, packaging and waste are part of the Point of sale module. The « Recipe » tab opens inside an item's sheet, next to its price and photos: the ingredients you buy and the dishes you sell live in the same catalogue — the one that also feeds the till and your online store.

  • Included in the Point of sale module
  • Open to the administrator and manager roles
  • Same catalogue as the till, invoicing and the online store
